  • 1/2 cup dairy-free chocolate chips
  • 1/2 cup + 1 tbsp cocoa powder, unsweetened
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 tsp salt
  • 1 tsp instant coffee powder, optional
  • 1 1/4 cups shredded zucchini, tightly packed
  • 1/2 cup nut butter of choice
  • 1/4 cup plant-based milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 360°F (182°C) and line a loaf pan (6×9 inches) with parchment paper or grease it with vegan butter.
  2. In a food processor, blend the rolled oats into flour. Add all dry ingredients except chocolate chips and process until well combined.
  3. Incorporate all wet ingredients into the dry mixture in the food processor and blend until smooth.
  4. Gently fold in the dairy-free chocolate chips using a spoon.
  5. Pour the batter into the prepared loaf pan, adding more chocolate chips on top if desired.
  6. Bake for approximately 35-40 minutes; check doneness with a toothpick inserted in the center.
  7. Allow cooling completely in the pan before slicing.
