  • 1 cup dried brown or green lentils
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 8 oz sliced mushrooms
  • 3 cloves garlic, minced
  • 4 lbs russet potatoes, peeled and quartered
  • 1 cup unsweetened plant-based milk
  • Salt and pepper to taste

Instructions

  1. Prepare the filling: Sauté onions in olive oil until translucent. Add carrots, celery, garlic, and mushrooms; cook until softened.
  2. Mix in lentils and vegetable broth along with tomato paste, soy sauce, herbs, salt, and pepper. Simmer until lentils are tender.
  3. Boil potatoes until fork-tender; mash with plant-based milk and seasoning until creamy.
  4. Preheat oven to 400°F (200°C). Layer lentil mixture in a baking dish; top with mashed potatoes.
  5. Bake for 25-30 minutes or until golden brown on top.
