  • 2 1/2 teaspoons instant dry yeast
  • 1 teaspoon sugar (optional)
  • 1/2 teaspoon salt
  • 1/3 cup tomato pizza sauce
  • 1 tablespoon mixed Italian herbs
  • 1 cup vegan mozzarella-style cheese (optional)
  • Assorted finely chopped vegetables (capsicum, mushrooms, spinach, sun-dried tomatoes)

Instructions

  1. In a bowl, mix warm water with yeast and sugar; let sit until frothy.
  2. Combine flour and salt in another bowl; add yeast mixture and olive oil to form a dough.
  3. Knead on a floured surface for 5–7 minutes until smooth; allow it to rise in an oiled bowl for about an hour.
  4. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  5. Prepare the filling by mixing tomato sauce, herbs, cheese (if using), and vegetables.
  6. Roll out the risen dough into a rectangle; spread the filling evenly and roll up tightly.
  7. Cut into 12 pieces, place on the baking sheet, and brush with olive oil mixed with herbs.
  8. Bake for 15–20 minutes until golden brown.
