  • 60g dairy-free softened butter
  • 4 tablespoons lemon juice
  • Zest of 1 large lemon
  • 200g plain flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 1 teaspoon turmeric or 2 drops yellow food gel (optional)

Instructions

  1. Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine plain flour, baking powder, and bicarbonate of soda.
  3. In another bowl, whisk together dairy-free butter and icing sugar until light and fluffy.
  4. Add lemon juice and zest to the butter mixture; mix well.
  5. Gradually incorporate the dry ingredients into the wet mixture until combined.
  6. If desired, fold in turmeric or food gel for color.
  7. Scoop tablespoon-sized balls onto the prepared baking sheet, spacing them apart.
  8. Bake for 12-15 minutes until slightly golden around the edges.
  9. Let cool on the baking sheet before transferring to a wire rack.
