  • 68 lasagna noodles (regular or gluten-free)
  • 1 2/3 cups hummus
  • 3.5 oz fresh spinach
  • 1 small can mushrooms (sliced)
  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 1 1/2 cups marinara sauce
  • 7 oz vegan cheese

Instructions

  1. Cook lasagna noodles in boiling salted water until al dente.
  2. In a baking dish, spread 1/2 cup marinara sauce at the bottom.
  3. Sauté diced onion, garlic, and mushrooms in oil for about 4 minutes; add spinach and cook until wilted.
  4. Stir hummus into the vegetable mixture and season as desired.
  5. Preheat oven to 360°F (180°C). Drain noodles and assemble by spreading the filling evenly on each noodle before rolling them up.
  6. Place rolled noodles seam-side down in the baking dish; top with remaining marinara sauce and sprinkle vegan cheese.
  7. Bake for 20-25 minutes until heated through.
