  • ½ cup sugar
  • ¼ cup vegan butter
  • 2 tbsp vegan creamer (oat or soy)
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1820 chocolate sandwich cookies
  • 1 cup nondairy chocolate chips
  • ½ cup peanut butter

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.
  2. In a bowl, mix sugar, vegan butter, vegan creamer, salt, and vanilla until smooth. Gradually add brown sugar and nondairy milk; mix well.
  3. Stir in flour and salt, then fold in mini chocolate chips.
  4. Press half of the cookie dough mixture into the bottom of the prepared pan. Crush the chocolate cookies and layer them over the dough. Drizzle melted peanut butter on top.
  5. Dollop remaining cookie dough over the caramel layer and spread gently.
  6. Bake for 25–30 minutes until golden brown. Cool completely before slicing.
