  • 3 cups + 1 heaping tablespoon gluten-free baking flour blend
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup cold butter or vegan butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 pint blueberries
  • 6 oz raspberries
  • 6 oz blackberries

Instructions

  1. Preheat your oven to 375°F and grease a 9×13” baking pan with nonstick spray.
  2. In a medium bowl, toss the berries with 1/2 cup granulated sugar and a heaping tablespoon of gluten-free flour; set aside.
  3. In a large bowl, mix the remaining flour, sugars, baking powder, cinnamon, and salt. In another bowl, whisk the egg and vanilla together before adding to dry ingredients along with cubed cold butter. Mix until crumbly.
  4. Press half of the crumb mixture into the prepared pan, layer with the berry mixture, then sprinkle the remaining crumbs over the top.
  5. Bake for 38-40 minutes until golden brown. Let cool completely before cutting into squares.
