  • 14 oz firm tofu
  • 2 tbsp soy sauce
  • 1/2 tbsp maple syrup
  • 1/4 cup coconut milk
  • 1/2 tbsp sriracha
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 1/3 cup peanut butter (room temperature)
  • 1 teaspoon brown sugar
  • 1/2 tbsp soy sauce
  • 2 teaspoons lime juice
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon ginger powder (or freshly grated ginger)
  • 1/3 cup warm water

Instructions

  1. Drain the tofu by placing it between two plates with a weight on top for at least 20 minutes.
  2. Prepare the marinade by mixing soy sauce, maple syrup, coconut milk, sriracha, garlic powder, and ginger powder in a bowl.
  3. Preheat your oven to 400°F (200°C).
  4. Cut drained tofu into strips, marinate them for at least 20 minutes in the refrigerator.
  5. Bake marinated tofu on a tray for about 10-12 minutes, flipping halfway through.
  6. Skewer the baked tofu and set aside.
  7. In another bowl, mix peanut butter, brown sugar, soy sauce, lime juice, rice vinegar, ginger powder, and warm water until smooth.
  8. Serve tofu skewers with peanut sauce drizzled on top or on the side.
