  • 1/4 cup low-sodium soy sauce
  • 1/4 cup water
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • 2 tsp fresh ginger (grated)
  • 2 cloves garlic (minced)
  • Sweet gem lettuce leaves
  • Sesame seeds (for garnish)
  • Green onion (sliced for garnish)

Instructions

  1. In a mixing bowl, whisk together soy sauce, water, honey, rice vinegar, sesame oil, cornstarch, ginger, and garlic until combined.
  2. Heat olive oil in a skillet over medium-high heat. Add diced chicken and cook for about 5 minutes until browned. Flip and cook for another 3 minutes.
  3. Pour the prepared sauce over the chicken in the skillet. Reduce heat and simmer for 3-5 minutes until the sauce thickens.
  4. Lay out sweet gem lettuce leaves and fill each leaf with the teriyaki chicken mixture.
  5. Garnish with sesame seeds and sliced green onion before serving.
