- 1 pound lean ground beef
- 4 medium sweet potatoes
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 1 packet taco seasoning
- 1 cup chunky salsa
- shredded cheese
- diced tomato
- diced avocado or guacamole

- In a large skillet over medium-high heat, brown the ground beef with chopped onion and minced garlic. Drain excess grease.
- Add taco seasoning and salsa; stir to combine and simmer for about 5 minutes until thickened.
- Poke holes in sweet potatoes and microwave on high for 8-10 minutes, turning halfway through, until soft.
- Allow sweet potatoes to cool slightly before slicing lengthwise and fluffing their insides with a fork.
