  • 1 pound lean ground beef
  • 4 medium sweet potatoes
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning
  • 1 cup chunky salsa
  • shredded cheese
  • diced tomato
  • diced avocado or guacamole
  • sour cream

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef with chopped onion and minced garlic. Drain excess grease.
  2. Add taco seasoning and salsa; stir to combine and simmer for about 5 minutes until thickened.
  3. Poke holes in sweet potatoes and microwave on high for 8-10 minutes, turning halfway through, until soft.
  4. Allow sweet potatoes to cool slightly before slicing lengthwise and fluffing their insides with a fork.
  5. Spoon the taco filling into each sweet potato and top with cheese, tomatoes, avocado or guacamole, and sour cream.
