  • 2 Sweet Potatoes (1 pound each), quartered
  • 1 Large Tart Apple, peeled and cored
  • 2 Tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 Stalks Celery, chopped
  • 1 Large Carrot, chopped
  • 1 Bay Leaf
  • 5 Cups Chicken Broth
  • 1 Cup Cream
  • Zest and Juice of 1 Lemon
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange quartered sweet potatoes and the peeled apple on a greased baking sheet.
  3. Roast in the oven for about 40 minutes until tender.
  4. Allow cooling slightly before peeling sweet potatoes.
  5. Heat olive oil in a large soup pot over medium heat.
  6. Sauté onion, celery, bay leaf, and carrot until tender.
  7. Remove bay leaf from the pot.
  8. Add chicken broth along with roasted sweet potatoes and apple pieces.
  9. Blend until smooth using an immersion blender or regular blender.
  10. Return to pot; stir in cream, lemon zest, and juice until well combined.
  11. Season with salt and pepper to taste.
  12. Gently heat on low until warmed through.
  13. Serve garnished with crumbled goat cheese or feta.
