  • 23 tbsp fresh lemon juice
  • 1/4 cup low-carb sweetener for rolling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together almond flour and low-carb sweetener.
  3. Add egg whites, lemon zest, and lemon juice; mix with a rubber spatula until well combined.
  4. Scoop out cookie dough using a cookie scoop and roll into balls. Roll in additional sweetener before placing on a parchment-lined baking tray.
  5. Flatten each cookie slightly using the bottom of a tumbler glass.
  6. Bake for 12-15 minutes until edges are lightly browned. Allow to cool completely before serving.
