  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3/41 lb ground beef
  • 24 oz marinara sauce
  • 32 oz ricotta cheese
  • 2 eggs
  • 1 cup cooked spinach, drained and chopped
  • Jumbo pasta shells
  • Mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook jumbo shells according to package instructions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté the bell peppers until softened, then add ground beef and cook until browned. Stir in marinara sauce and seasonings; simmer briefly.
  4. In a mixing bowl, combine ricotta cheese, eggs, chopped spinach, and mozzarella; mix well.
  5. Fill each shell with the ricotta mixture and arrange them in a baking dish over some meat sauce. Pour remaining sauce on top.
  6. Cover with foil and bake for 20 minutes. Remove foil, sprinkle with more mozzarella cheese, increase temperature to 375°F (190°C), and bake for an additional 15 minutes or until bubbly.
