  • 1 tbsp cornstarch
  • 1/4 tsp baking powder
  • 1/4 cup liquid egg whites
  • 1/3 cup fat-free Greek yogurt
  • 12 tbsp water
  • 3 drops red food coloring
  • 1/2 tbsp white chocolate chips (optional)
  • 1 strawberry (for topping)
  • Fat-free whipped cream (optional)
  • Light pancake syrup (optional)

Instructions

  1. In a mixing bowl, combine oat flour, protein powder, cornstarch, and baking powder.
  2. Add liquid egg whites, Greek yogurt, and water to the dry ingredients. Mix well until combined.
  3. Heat a nonstick skillet over medium heat.
  4. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on top, then flip and cook until golden brown.
