  • 250 g all-purpose flour
  • 100 g butter (or lard)
  • 100 ml boiling water
  • 400 g ground lamb (or beef)
  • 1 tsp finely chopped onion
  • 1 tsp white pepper
  • 0.5 tsp black pepper
  • 0.5 tsp ground mace
  • 0.25 tsp ground nutmeg
  • 1 beaten egg (for brushing)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, melt the butter with boiling water. Combine with half of the flour and salt in a mixing bowl. Stir until smooth and knead until pliable.
  3. In another bowl, mix the meat with onion and seasonings until well combined.
  4. Roll out the pastry and cut larger circles for bases and smaller ones for tops.
  5. Line muffin tins with the pastry bases, fill with meat mixture, moisten edges, and seal with tops.
  6. Brush with beaten egg and bake for 30–35 minutes until golden brown.
