  • 1/3 cup almond meal (or breadcrumbs)
  • 1 small onion, finely chopped
  • 5 cloves garlic, minced
  • 16 ounces mushrooms, sliced
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • 2 tablespoons Worcestershire sauce
  • 1/3 cup chopped parsley
  • 1 egg
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, almond meal, chopped onion, egg, minced garlic, Italian seasoning, Worcestershire sauce, salt, and pepper. Mix until well combined.
  3. Form the mixture into 1½-inch meatballs and place on the prepared baking sheet. Bake for 15-20 minutes until cooked through.
  4. In a skillet over high heat, sauté mushrooms in olive oil until golden brown. Remove from pan.
  5. In the same skillet, add butter and onions; cook until softened before adding garlic.
  6. Stir in beef broth, parsley, Worcestershire sauce, cooked mushrooms, and seasonings. Let simmer until slightly thickened.
  7. Add baked meatballs to the skillet and cook together for an additional 5 minutes.
