Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, minced garlic, celery, and diced carrot for 5-7 minutes until softened.
  2. Add vegetable broth and bring to a boil. Stir in rinsed quinoa, reduce heat to low, and simmer for 15 minutes.
  3. Incorporate corn kernels and coconut milk, then season with smoked paprika, thyme, salt, and pepper. Cook on low heat for an additional 5-10 minutes.
  4. Serve hot, garnished with fresh parsley.
