  • 6 Tbsp aquafaba (chickpea water)
  • 2 tsp ground flaxseed
  • 6 Tbsp water
  • 5 oz coconut milk (room temperature)
  • 2 oz coconut oil (melted)
  • 16 oz all-purpose flour
  • 2 oz sugar
  • 1 tsp salt
  • 1 ½ tsp quick-rise yeast
  • 3 cups light olive oil (for frying)
  • powdered sugar

  • shredded coconut (or chopped nuts)
  • jam or any other vegan filling (if desired)

Instructions

  1. In a mixing bowl, whisk together aquafaba, ground flaxseed, water, coconut milk, and melted coconut oil until smooth.
  2. Combine warm water with yeast in a small bowl and let sit until frothy.
  3. In a large bowl, mix flour, sugar, and salt together.
  4. Add the wet mixture and activated yeast to the dry ingredients; stir until a soft dough forms.
  5. Knead on a floured surface for about 5 minutes until smooth. Let rise in an oiled bowl covered with a damp cloth for around 90 minutes.
  6. Roll out the risen dough to about ½ inch thick and cut into doughnut shapes.
  7. Heat oil to approximately 350°F (175°C) in a frying pan or deep fryer and fry each doughnut for about 2–3 minutes per side until golden brown.
  8. Cool slightly before dusting with powdered sugar or adding desired toppings.
