  • 1 cup unsweetened shredded coconut
  • 1 cup coconut cream
  • 1 cup dark chocolate chips (60-75% cocoa)
  • 1/2 cup creamy almond butter

Instructions

  1. Line the bottom of a 6" round springform pan with parchment paper.
  2. In a food processor, combine pecans, shredded coconut, and optional salt; blend until clumped together.
  3. Press the crust mixture into the prepared springform pan evenly.
  4. In a small saucepan over low heat, melt dark chocolate chips and coconut cream together, stirring frequently.
  5. Remove from heat; add almond butter and whisk until smooth.
  6. Pour the chocolate filling over the crust and refrigerate for at least 2 hours until set.
  7. Slice into 8 pieces and serve chilled.
