  • 1/2 cup warm water
  • 1 teaspoon active dry yeast
  • 1 tablespoon sugar
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme
  • 1 tablespoon olive oil (for drizzling)
  • 1 tablespoon honey
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a medium bowl, combine warm water, sugar, and active dry yeast. Let sit for about 5 minutes until frothy.
  2. In a large bowl, mix all-purpose flour and salt.
  3. Add the yeast mixture and olive oil to the flour mixture. Stir until a dough begins to form.
  4. Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic.
  5. Place the dough in an oiled bowl, cover with a towel, and let rise for 1 to 1.5 hours until doubled in size.
  6. Preheat your oven to 475°F (245°C) with a pizza stone or baking sheet inside.
  7. Prepare the cheese mixture by combining ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a small bowl.
  8. Punch down the risen dough and roll it into a thin round shape (about 12 inches).
  9. Transfer the rolled dough onto parchment paper or a pizza peel.
  10. Spread the cheese mixture evenly over the dough and sprinkle fresh thyme on top.
  11. Bake for 10–12 minutes until golden brown and bubbly.
  12. Drizzle with olive oil and honey before serving.
