  • 1 lb asparagus
  • 1 block (450g) super firm tofu
  • 2 tbsp cornstarch
  • Juice and zest of 1.5 lemons
  • 2 tbsp nutritional yeast
  • ½ cup vegetable broth
  • Avocado oil

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet.
  2. Toss asparagus with avocado oil, nutritional yeast, lemon juice, salt, and pepper on the baking sheet. Roast for 10-12 minutes until tender.
  3. In a bowl, mix cornstarch, nutritional yeast, thyme, salt, and pepper. Coat tofu pieces in this mixture.
  4. Heat avocado oil in a skillet over medium heat. Sear coated tofu until golden brown on both sides (3-5 minutes each).
  5. For the sauce, combine lemon juice, zest, maple syrup, black pepper, vegetable broth, and cornstarch in a bowl.
  6. Remove tofu from the skillet; sauté garlic in remaining oil until fragrant. Add sauce mixture and simmer until thickened (2-3 minutes). Return tofu to coat well before serving with roasted asparagus.
