  • 4 cups shredded zucchini
  • 1/2 cup diced yellow onion
  • 2 tbsp minced garlic
  • 2 eggs (beaten)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 3/4 cup grated Parmesan cheese (divided)
  • 1/2 cup crushed beef rinds or Parmesan cheese crisps
  • 3 tbsp butter

Instructions

  1. Preheat your oven to 375°F and prepare an 8” x 8” baking dish with non-stick cooking spray.
  2. Drain the shredded zucchini using cheesecloth to remove excess moisture.
  3. In a mixing bowl, combine drained zucchini, onion, garlic, beaten eggs, mozzarella, cheddar, and half of the Parmesan. Mix well.
  4. Pour the mixture into the baking dish and bake for about 20 minutes.
  5. Meanwhile, melt butter and mix with crushed beef rinds (or Parmesan crisps) and remaining Parmesan in a small bowl.
  6. After baking for 20 minutes, sprinkle the topping over the casserole and return it to the oven for another 5-8 minutes until golden brown.
  7. Allow to cool slightly before serving.
