  • 3 large eggs (room temperature)
  • 1/4 cup butter (melted)
  • 1/4 cup heavy cream
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. In a bowl, mix almond flour, coconut flour, baking powder, baking soda, salt, and sweetener.
  3. In another bowl, beat cream cheese until smooth; add eggs one at a time while mixing.
  4. Stir in melted butter, heavy cream, lemon zest, lemon juice, and vanilla extract.
  5. Gradually combine dry ingredients with wet mixture until just blended.
  6. Fill muffin cups about 3/4 full and bake for 18-22 minutes until golden brown.
  7. Cool in tin for 10 minutes before transferring to a wire rack.
