Italian Grinder Chicken Salad is a delightful twist on the classic flavors of a Grinder sandwich, transformed into a tangy and satisfying salad. This dish is perfect for a quick lunch or as part of a gathering with friends. With its mix of tender chicken and zesty vegetables, this salad can be served in multiple ways—whether on toasted croissants, with crunchy crackers, or nestled in crisp lettuce wraps.

  • 2 cups shredded rotisserie chicken
  • 1/4 lb diced turkey slices
  • 1/4 lb diced turkey pepperoni
  • 1/4 cup diced provolone cheese
  • 1/4 cup crumbled feta cheese
  • 2/3 cup diced grape tomatoes
  • 1/3 cup mild banana peppers
  • 1/2 thinly sliced red onion
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 3 tablespoons red apple vinegar
  • 12 tablespoons banana pepper juice (to taste)
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • Salt and freshly cracked pepper to taste

Instructions

  1. In a mixing bowl, combine all dressing ingredients and mix well. Adjust seasoning to taste.
  2. In a large bowl, combine the shredded chicken, turkey slices, turkey pepperoni, red onion, tomatoes, banana peppers, and cheeses.
  3. Pour most of the dressing over the salad mixture and toss to coat evenly.
  4. Store in an airtight container in the fridge for up to four days.
  5. If needed, add leftover dressing before serving to rehydrate.
