  • 3/4 cup granulated sugar
  • 3/4 cup light corn syrup
  • 3 large egg whites (room temperature)
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

  1. In a medium heavy-bottom saucepan, combine water, sugar, and corn syrup. Place over medium-high heat and let it bubble until it reaches 240°F without stirring.
  2. While the syrup cooks, whip egg whites and cream of tartar in a stand mixer until soft peaks form (about 3-4 minutes).
  3. Once the syrup reaches temperature, remove it from heat and slowly pour it into the whipped egg whites while mixing at medium speed.
  4. Increase speed to medium-high and continue whipping for 7-8 minutes until thickened. Add vanilla extract and mix until combined.
  5. Allow the fluff to cool completely before transferring to an airtight container.
