  • 1 cup mashed sweet potato
  • 2 oz unsweetened dark baking chocolate
  • 1/4 cup creamy cashew butter or almond butter
  • 1/4 cup pure maple syrup
  • 1 egg
  • 1 egg yolk
  • 1 tsp pure vanilla extract
  • 1/3 cup cacao powder
  • 1 Tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/8 tsp pink salt
  • Optional: dark chocolate chips and chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking pan.
  2. Melt the dark baking chocolate in a microwave-safe bowl in short bursts, stirring until smooth.
  3. In a large mixing bowl, blend the melted chocolate with sweet potato, nut butter, maple syrup, egg, egg yolk, and vanilla extract.
  4. In a separate bowl, sift together the cacao powder, coconut flour, baking soda, and pink salt; then gradually mix this into the wet ingredients.
  5. Fold in optional dark chocolate chips and nuts.
  6. Pour the batter into the prepared pan and bake for about 25 minutes or until mostly clean when tested with a toothpick.
  7. Allow to cool before slicing into squares.
