  • 3 cups shredded chicken (cooked)
  • 4 cups cauliflower rice
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup chopped spinach, broccoli florets, or sliced mushrooms
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté your chosen vegetables for about 5 minutes until tender.
  3. In a large mixing bowl, combine shredded chicken, cauliflower rice, sautéed vegetables, cream cheese, half of the cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
  4. Pour the mixture into a greased baking dish and top with the remaining cheddar cheese.
  5. Bake for approximately 25 minutes until hot and bubbly.
