  • 1 1/4 lbs boneless chicken breasts
  • 2 tablespoons olive oil
  • 10 oz zucchini
  • 10 oz yellow squash
  • 1 teaspoon lemon zest
  • 1/3 cup grated parmesan cheese
  • Fresh parsley
  • Salt and freshly ground black pepper
  • 3 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 2 tablespoons butter
  • 2 tablespoons fresh lemon juice

Instructions

  1. In a bowl, season diced chicken with salt, pepper, half of the Italian seasoning, garlic powder, and lemon zest.
  2. Heat olive oil and butter in a skillet over medium-high heat. Add seasoned chicken and sauté until golden brown (5–7 minutes).
  3. Add sliced zucchini and squash to the skillet. Sprinkle remaining seasoning and sauté until tender (3–5 minutes).
  4. Stir in parmesan cheese and parsley, then drizzle with fresh lemon juice before serving.
