  • ⅔ cup carrots (diced)
  • 1 red bell pepper (diced)

  • 12 oz cauliflower rice (frozen and thawed)
  • ¾ cup buffalo sauce
  • ⅓ cup nonfat Greek yogurt
  • 1½ tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced carrots, onions, and red bell pepper; season with garlic powder, parsley, salt, and pepper. Cook until vegetables are translucent (about 4 minutes). Stir in thawed cauliflower rice and cook for another 4 minutes.
  3. In a mixing bowl, whisk together egg whites, buffalo sauce, and Greek yogurt until smooth. Fold in shredded chicken followed by the sautéed vegetables.
