  • 12 oz pasta (penne or fusilli)
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic (minced)
  • ½ small red onion (finely chopped)
  • 1 ½ cups cherry tomatoes (halved)
  • ½ cup Kalamata olives (sliced)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ½ cup feta cheese (crumbled)
  • Fresh basil (for garnish, optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic and chopped red onion until fragrant.
  3. Add halved cherry tomatoes and sliced olives to the skillet, seasoning them with lemon juice, lemon zest, oregano, basil, salt, and pepper. Cook until tomatoes soften.
  4. Toss the cooked pasta into the skillet with the sautéed mixture. If needed, add reserved pasta water to reach desired sauce consistency.
  5. Fold in crumbled feta cheese before serving and garnish with fresh basil if desired.
