  • 275 g gluten-free plain flour (e.g., Doves Farm)
  • 125 g cold unsalted butter or dairy-free butter (e.g., Stork baking block)
  • 1 tsp xanthan gum
  • Pinch of salt
  • 50 g light brown sugar
  • 1 large egg (beaten)
  • 12 tbsp cold water

Instructions

  1. Cut the cold butter into small cubes and mix with gluten-free flour in a bowl until crumbly.
  2. Add xanthan gum, brown sugar, and salt; mix well.
  3. Incorporate beaten egg into the mixture using an electric mixer or fork until combined.
  4. Gradually add cold water until slightly sticky dough forms.
  5. Shape into a ball, wrap in cling film, and chill in the fridge for 30 minutes.
  6. Preheat oven to 180°C/160°C fan.
  7. Roll out chilled dough on floured surface to about 3-5mm thick and fit into a pie tin.
  8. Prick the base with a fork and blind bake with weights for even cooking.
