  • 1 cup old cheddar cheese (shredded)
  • 1 cup gluten-free all-purpose flour with xanthan gum
  • ½ tsp salt (plus extra for topping)
  • ¼ tsp garlic powder
  • ¼ cup salted butter (cold and cubed)
  • 45 tbsp cold water

Instructions

  1. In a large bowl, combine shredded cheese, gluten-free flour, salt, garlic powder, and cubed butter.
  2. Mix lightly with a fork before using a pastry blender to incorporate the butter into small pieces.
  3. Gradually add cold water until the mixture forms a dough. Divide into two discs, wrap in plastic wrap, and refrigerate for at least one hour.
  4. Preheat your oven to 375ºF. Roll out one disc on a floured surface to about 1/8 inch thick and cut into squares.
  5. Transfer squares to a parchment-lined baking sheet using a bench scraper. Optionally puncture each cracker with a chopstick for decoration.
  6. Sprinkle with additional salt and repeat with the second disc of dough.
  7. Bake for 14-16 minutes until they are golden orange and crispy.
  8. Allow to cool completely on a rack before enjoying.
