  • 3/4 teaspoon xanthan gum (if needed)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons light brown sugar
  • 2/3 cup milk, dairy or non-dairy
  • 1 tablespoon oil
  • 2 eggs or 6 tablespoons aquafaba
  • 2 teaspoons vanilla extract
  • 2 apples, peeled and finely diced
  • 3 cups powdered/icing sugar
  • 3 tablespoons milk, dairy or non-dairy
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together gluten free flour blend, xanthan gum (if needed), baking powder, salt, cinnamon, nutmeg, and brown sugar.
  2. Add milk, oil, eggs (or aquafaba), and vanilla extract. Mix until smooth; fold in diced apples.
  3. Heat oil in a skillet to 360°F – 375°F.
  4. Scoop out batter (1–2 tablespoons) and fry until golden brown on both sides; about 5–6 minutes total.
  5. Cool on a wire rack and prepare the glaze by mixing powdered sugar with milk and vanilla until thick.
  6. Dip cooled fritters into glaze before serving.
