  • 100 g gluten-free oats (optional)
  • 30 g coconut oil
  • 15 g cocoa powder
  • 200 g cashews (soaked)
  • 200 g raspberries (fresh or frozen)
  • 50 g dates
  • juice of 1/2 lime
  • seeds from 1 vanilla pod
  • 30 g raspberries
  • edible flowers

Instructions

  1. Soak cashews in water for at least an hour or overnight.
  2. Line a small baking pan with parchment paper.
  3. In a food processor, blend soaked cashews, dates, oats, coconut oil, and cocoa powder until smooth.
  4. Press the mixture into the bottom of the prepared pan evenly.
  5. Blend raspberries, additional dates, lime juice, and vanilla seeds until creamy.
  6. Spread the raspberry filling over the crust and smooth the top.
  7. Chill in the refrigerator for at least 60 minutes before serving.
  8. Decorate with fresh raspberries and edible flowers before enjoying.
