  • 1 shallot, finely chopped
  • 4 garlic cloves, minced
  • 1 can (14 oz) cherry tomatoes
  • ½ cup chicken broth
  • 2 mozzarella balls, chopped
  • Fresh basil leaves

Instructions

  1. Preheat your oven to 200 °C (400 °F) if using.
  2. Season chicken fillets with salt, pepper, garlic powder, and paprika.
  3. In a skillet over medium-high heat, heat olive oil and butter. Cook seasoned chicken for about 5 minutes per side until fully cooked. Remove and keep warm.
  4. In the same skillet, sauté minced garlic and chopped shallot until fragrant. Deglaze with white apple vinegar and simmer while scraping brown bits.
  5. Stir in salt, pepper, dried basil, and tomato paste; then add chicken broth and canned tomatoes. Bring to a boil then reduce to simmer for about 5 minutes.
  6. Nestle chicken back into the sauce, top with basil leaves and mozzarella cubes. Simmer for another 5 minutes or bake for 10 minutes until golden.
