- 1 (15 oz) can chickpeas, drained and rinsed
- ½ cup crumbled feta cheese
- ⅓ cup dried cranberries
- ¼ cup finely chopped red onion
- ¼ cup chopped fresh parsley
- ¼ cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- 1 clove garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- In a large mixing bowl, combine chickpeas, feta cheese, cranberries, red onion, and parsley. Toss gently to mix.
- In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey/maple syrup, garlic, salt, and pepper until smooth.
- Pour the vinaigrette over the salad mixture and toss thoroughly to coat all ingredients. Chill for 15–20 minutes before serving.
