Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • ½ cup crumbled feta cheese
  • ⅓ cup dried cranberries
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh parsley
  • ¼ cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 1 clove garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. In a large mixing bowl, combine chickpeas, feta cheese, cranberries, red onion, and parsley. Toss gently to mix.
  2. In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey/maple syrup, garlic, salt, and pepper until smooth.
  3. Pour the vinaigrette over the salad mixture and toss thoroughly to coat all ingredients. Chill for 15–20 minutes before serving.
