  • 3 cups shredded mozzarella cheese
  • 2 ounces cream cheese
  • 1 3/4 cups almond flour
  • 1 tablespoon baking powder
  • 2 large eggs

Instructions

  1. Preheat your oven to 200C/400F and line a baking tray with parchment paper.
  2. In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 20-second increments until melted. Whisk until smooth and let cool slightly.
  3. Transfer the cheese mixture to a food processor, then add almond flour, baking powder, and eggs. Pulse until you have a thick dough.
  4. On a surface lightly dusted with almond flour, knead the dough gently and divide it into six equal portions. Shape each portion into balls and flatten them into bun shapes on the baking tray. Brush tops with egg wash and sprinkle sesame seeds if desired.
  5. Bake for 14-17 minutes until golden brown. Allow to cool before slicing.
