  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1/4 cup warm water (more as needed)
  • 1 tablespoon extra virgin olive oil (plus more for brushing)
  • Optional: Fresh minced garlic and chopped parsley

Instructions

  1. In a large bowl, combine the gluten-free flour, xanthan gum, tapioca starch, baking powder, and salt.
  2. In another bowl, whisk together the egg, warm water, and olive oil.
  3. Gradually mix wet ingredients into the dry until a soft dough forms; adjust with more water or tapioca starch if necessary.
  4. Shape the dough into a round disc and cut into 8 equal portions.
  5. Flatten each piece to about 1/8-inch thick.
  6. If desired, press garlic and parsley onto both sides of each piece.
  7. Heat a cast iron skillet over high heat with olive oil; cook each naan for about 40 seconds per side until charred and bubbly.
  8. Keep cooked naan warm under a kitchen towel while repeating with remaining dough.
