  • 1 bell pepper (diced)
  • 2 cloves garlic (minced)
  • 2 lb ground beef
  • 4 tbsp keto taco seasoning
  • 2 tbsp tomato paste
  • 2 medium eggs
  • 1½ cups shredded cheese
  • ½ cup heavy whipping cream
  • 1 jalapeno (sliced, optional)

Instructions

  1. Preheat the oven to 350°F (180°C). In a large skillet over high heat, cook the diced onion, bell pepper, minced garlic, and ground beef until the meat is browned. Use a spatula to break it into small pieces.
  2. Mix in the taco seasoning and tomato paste until combined. Transfer this mixture to a casserole pan and spread evenly.
  3. In a mixing bowl, whisk together the eggs, heavy whipping cream, and half of the shredded cheese. Pour over the beef layer and top with remaining cheese and optional jalapeno slices.
  4. Bake uncovered on the top rack for 15-17 minutes until bubbling and golden. Let rest for about 5 minutes before serving.
