  • 1 tablespoon avocado oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrot
  • 1 cup chopped white fingerling potato
  • 2 garlic cloves (minced)
  • 1 cup green lentils
  • 1 cup red lentils
  • 4 cups vegetable broth
  • 2 cups water
  • 1/4 cup tomato paste
  • 1 cup almond milk (or coconut milk)
  • 23 cups spinach
  • Assorted spices: turmeric, cumin, ginger, smoked paprika, cinnamon

Instructions

  1. In a large stockpot or Dutch oven, heat the avocado oil over medium heat. Sauté onions, celery, carrots, potatoes, and garlic for about 5 minutes until softened.
  2. Season with salt, pepper, turmeric, cumin, ginger, smoked paprika, and cinnamon; cook for another 2 minutes.
  3. Stir in both types of lentils and sauté briefly before adding vegetable broth, water, and tomato paste. Bring to a boil then reduce heat to simmer for 30 minutes.
  4. Remove from heat and mix in almond milk or coconut milk along with lemon juice and spinach until the spinach wilts.
  5. Serve warm topped with your favorite garnishes.
