  • 1 (16 oz) package super firm or extra firm tofu
  • 1/3 cup plain plant-based milk or regular milk
  • 1/3 cup all-purpose flour or gluten-free flour
  • 1 cup panko breadcrumbs
  • 1 cup buffalo sauce
  • 68 corn tortillas

Instructions

  1. Preheat oven to 450°F. Pat tofu dry and cut into bite-sized chunks.
  2. In a bowl, mix milk, flour, garlic powder, paprika, salt, and pepper until smooth.
  3. Coat tofu pieces in the batter then cover with panko breadcrumbs.
  4. Spread on a baking sheet sprayed with cooking spray and bake for 15–20 minutes, flipping halfway through.
  5. Toss baked tofu in buffalo sauce until well-coated.
  6. Warm tortillas and layer with guacamole if desired; add buffalo tofu and any additional toppings.
