  • 19 oz can black beans
  • ½ cup salsa
  • 1 tbsp taco seasoning
  • 1 tbsp chipotle pepper in adobo sauce
  • ½ tsp garlic powder
  • 1 tbsp olive oil
  • Tortillas (flour or corn)

Instructions

  1. Preheat the oven to 450º F.
  2. Drain and rinse black beans thoroughly.
  3. In a bowl, mix the black beans, salsa, taco seasoning, chipotle pepper, garlic powder, and salt until slightly chunky.
  4. Heat olive oil in a skillet over medium-high heat; add sliced green onions and cook until fragrant.
  5. Stir in the bean mixture; cook for about five minutes until warmed through.
  6. Fill tortillas with the bean mixture and optional cheese; fold over.
  7. Brush the outside of each tortilla with oil and place on a baking sheet.
  8. Bake for 6–8 minutes; flip and bake until golden brown.
  9. Prepare toppings while baking; serve immediately.
