  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 5 oz fresh baby spinach
  • 1/2 cup grated Parmesan cheese
  • Dried oregano, to taste
  • Dried basil, to taste
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes, optional

Instructions

  1. Boil salted water in a large pot; add gnocchi and cook until they float (about 3 minutes). Drain.
  2. In a skillet, heat olive oil over medium heat; sauté onion until softened (5-7 minutes).
  3. Add garlic and tomato paste; cook until fragrant (1 minute).
  4. Stir in crushed tomatoes, oregano, basil, salt, pepper, and red pepper flakes; simmer for at least 15 minutes.
  5. Remove from heat; mix in heavy cream and Parmesan until melted.
  6. Stir in spinach until wilted.
  7. Toss cooked gnocchi into the sauce until coated. Serve immediately.
