  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 can whole kernel corn (15 oz)
  • 1 can black beans (15 oz)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • Shredded cheddar cheese for garnish

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
  2. Add diced onion and minced garlic; sauté for 3-4 minutes until onion is translucent.
  3. Pour in beef broth along with canned tomatoes, corn, black beans, and diced potatoes; stir to combine.
  4. Season with smoked paprika, chili powder, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes until potatoes are tender.
  5. Stir in heavy cream or half-and-half; heat through without boiling.
  6. Serve hot topped with shredded cheese and crushed tortilla chips.
