  • 4 boneless, skinless chicken thighs
  • 2 cloves garlic
  • ½ cup sun-dried tomatoes
  • 1 cup chicken stock
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tbsp olive oil
  • Italian seasoning and spices

Instructions

  1. In a skillet, heat olive oil over medium-high heat. Season chicken thighs with salt and pepper, then brown for 2-3 minutes on each side. Remove from skillet.
  2. In the same skillet, sauté minced garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes for about 2-3 minutes until fragrant.
  3. Pour in chicken stock and heavy cream; add Parmesan cheese and whisk in cornstarch until smooth.
  4. Return chicken to the skillet; cover and simmer on low heat for 15-20 minutes until cooked through.
  5. Stir in fresh basil before serving warm with extra Parmesan if desired.
