  • 1/3 cup melted coconut oil or dairy-free butter
  • 3/4 cup brown sugar or coconut sugar
  • 1 1/2 cups mashed overripe bananas (about 3 large)
  • 2 eggs or egg substitute
  • 1 tsp vanilla extract
  • 1 3/4 cups gluten-free all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup white sugar for the cinnamon sugar swirl
  • 2 tsp cinnamon for the cinnamon sugar swirl

Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large mixing bowl, combine melted coconut oil and brown sugar. Mix until well combined. Add mashed bananas and blend smooth.
  3. Incorporate eggs and vanilla into the mixture briefly.
  4. Add gluten-free flour, baking soda, cinnamon, and salt; stir until smooth.
  5. Pour half the batter into the loaf pan. In a separate bowl, mix white sugar with cinnamon for the swirl; sprinkle most of it over the batter.
  6. Top with remaining batter and sprinkle with leftover cinnamon-sugar mixture.
  7. Bake for 55–65 minutes or until a toothpick comes out clean.
  8. Cool in the pan before slicing.
