Ingredients

Scale
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup unsalted butter, melted (for filling)
  • ⅓ cup brown sugar (for filling)
  • 1 ½ tsp cinnamon (for filling)
  • ½ cup powdered sugar (for glaze)
  • 1 tbsp milk (for glaze)
  • ½ tsp vanilla extract (for glaze)

Instructions

  1. Cream together the softened butter and granulated sugar until light and fluffy. Mix in the egg and vanilla extract until well combined.
  2. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  3. Roll out the dough into a rectangle about ¼-inch thick between two sheets of parchment paper.
  4. For the filling, mix melted butter with brown sugar and cinnamon before spreading it evenly over the rolled-out dough.
  5. Carefully roll the dough into a log shape, wrap it tightly in plastic wrap, and refrigerate for at least 30 minutes.
  6. Preheat your oven to 350°F (175°C) while allowing the dough to chill. Line a baking sheet with parchment paper.
  7. Slice the chilled log into rounds about ¼-inch thick and place each slice on the prepared baking sheet.
  8. Bake for 10-12 minutes or until edges are lightly golden. Allow cookies to cool completely on a wire rack.
  9. For the glaze, mix powdered sugar with milk and vanilla extract until smooth; drizzle over cooled cookies before serving.
