  • 1 lb. boneless skinless chicken breast (or thighs)
  • 6 strips thick cut Turkey Bacon (plus drippings)
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 5 cups chicken broth
  • 1 cup half-and-half
  • lbs. Yukon Gold potatoes (cubed)
  • Salt
  • Pepper
  • Hot sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • ½ teaspoon EACH: dried rosemary, oregano, mustard powder
  • ¼ teaspoon pepper
  • 1 pinch red pepper flakes
  • ¼ cup flour

Instructions

  1. Cook Turkey Bacon in a pot over low heat until crispy; set aside and reserve drippings.
  2. Sear seasoned chicken in the same pot until golden brown; set aside.
  3. In the drippings, sauté onions, carrots, and celery until softened.
  4. Add garlic and seasonings; stir to combine.
  5. Sprinkle flour into the mixture and cook for about 2 minutes.
  6. Gradually pour in chicken broth and half-and-half while stirring to prevent lumps.
  7. Add cubed potatoes; bring to a boil then simmer until fork-tender (about 20 minutes).
  8. Stir in shredded cheese and half of the chopped Turkey Bacon before serving.
