  • 1 lb boneless, skinless chicken breasts
  • 1 medium white onion, diced
  • 1/2 tbsp olive oil
  • 1 medium-sized spaghetti squash
  • 1 jar Primal Kitchen Garlic Alfredo Sauce (or homemade)
  • 3 cups broccoli florets
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Halve spaghetti squash lengthwise; remove seeds. Spray cut sides with oil and season with salt. Place cut side down on a baking sheet.
  3. In a casserole dish, combine chicken, onion, olive oil, salt, and pepper; toss well.
  4. Bake both dishes (squash and chicken) for 30 minutes.
  5. Remove from oven; dice chicken and scrape out squash strands into the casserole.
  6. Mix in Alfredo sauce, broccoli, remaining salt, pepper, and garlic powder until combined.
  7. Bake for an additional 30 minutes until golden brown on top.
