  • ½ C + 1 Tbsp balsamic vinegar
  • 2 Tbsp honey
  • 6 chicken tenders (cut into chunks)
  • 1 ¼ tsp salt
  • ½ tsp black pepper
  • 1 tsp lemon seasoning
  • 2 Tbsp extra virgin olive oil
  • 1 small yellow onion (diced)
  • 2 Tbsp minced garlic
  • 4 C halved cherry tomatoes
  • ¼ tsp dried thyme
  • 1 C part-skim mozzarella pearls (quartered)
  • ½ C tightly packed fresh basil leaves (chopped)

Instructions

  1. Prepare the balsamic glaze by combining ½ cup balsamic vinegar and 1 tablespoon honey in a small saucepan over medium-low heat until thickened.
  2. Season chicken tenders with salt, pepper, and lemon seasoning.
  3. Heat 1 tablespoon olive oil in a cast iron skillet over medium-high heat. Cook chicken until browned (about 4 minutes each side). Remove and keep warm.
  4. In the same skillet, add remaining olive oil and sauté diced onion for 3 minutes, then add minced garlic for another 30 seconds.
  5. Add halved cherry tomatoes, remaining balsamic vinegar, honey, salt, pepper, and lemon seasoning; cook until tomatoes soften (approx. 2 minutes).
  6. Return chicken to the skillet, top with mozzarella pearls, cover off heat to melt cheese for 2 minutes.
  7. Garnish with chopped fresh basil before serving.
